Feijoa Cake

Feijoa Cake

Ingredients

• 450 / 500g Feijoa (in rough chunks)

• 300g flour

• 250g brown sugar

• 1 cup sour cream

• 80g butter

• 2 large eggs

• 1 teaspoon vanilla essence

• 1 teaspoon cinnamon

• 1 teaspoon baking soda

• Grated rind of 1 lemon

• Quarter teaspoon salt


TOPPING

• Half cup brown sugar

• 1 teaspoon cinnamon

Method

• Pre-heat fan-assisted oven to 180ºc.

• Grease approx 22 / 23cm cake tin.

• Cream butter & sugar together.

• Beat in vanilla essence & lemon rind / zest.

• Add eggs 1 at a time, beating well after each addition.

• Sift flour, cinnamon, baking soda, salt & stir into creamed mixture.

• Add feijoas and sour cream to the mix.

• Mix everything together one last time.

• The mixture is super thick. If you’re not using a cake mixer - then it’s an arm work-out!

• Pour mixture into prepared cake tin.

• Mix remaining sugar & cinnamon and sprinkle on top.

• Bake at 180ºc for 1 hour. Test after 45 mins - depends on heat of your oven.

• Leave to cool on wire rack.

• Really good with yoghurt / hot vanilla custard or ice-cream. Or just on it’s own with a cuppa!
