Lucky Cheeseburger Tacos

Ingredients
FOR THE MINCE
• Lucky Taco Cumin, Chilli & Lime Marinade pouch 120g
• 1 tbsp Mexican oregano (or ordinary oregano)
• 600g beef mince (you want some fat for tacos - not super lean)
• 200g grated mild Cheddar
TO BUILD
• 12 corn (or flour) tortillas (we use Remarkable Flour Tortillas)
• 1 cup Avocado Crema (see recipe tab)
• 200g sliced red cabbage
• 280g Lucky Taco Pink Pickle
• 100g Lucky Taco Salsa Roja
• handful of fresh coriander leaves
• 2 limes, cut into wedges
• Lucky Taco Chilli Salt
• ¼ cup toasted sesame seeds

Method
• Preheat oven to 80°C.
• In stacks of six, wrap freshly cooked tortillas in foil and place in preheated oven. Alternatively, use a tortilla warmer.
• Mix mince with Lucky Taco Cumin, Chilli & Lime Marinade & oregano in a bowl. Mix together with your hands until the mince has absorbed the flavours.
• Heat oil in a large frying pan. Add the mince. Resist the urge to move it when you first add it to the pan. Just spread it evenly to fit the diameter of the pan and leave it for a few minutes so you get it brown and crispy. Flip and cook for a few more minutes until all groovy and brown.
• Dump in cheese and place a well-fitting lid over the pan. Turn heat down to low. If you don’t have a suitable lid, wrap some foil around the top of the pan to help the cheese melt quickly. Leave for 2 minutes.
• Lift lid or unwrap foil, and mix it all through with tongs. It should be gooey and unbelievably delicious and decadent.
• To build, dollop avocado crema on to tortilla, followed by yummy gooey cheesy beef, cabbage, pink pickle, salsa roja, fresh coriander and a squeeze of lime. Top with a shimmy of chilli salt & toasted sesame seeds. YUMMO!
