Serves: Enough for 12 tacos
You could buy our Lucky Taco Pink Pickle from Farro - but that's AKL central only - so for anyone else reading - get pickling! It's AMAZING! And I, for one, can't taco without it!
• 2 large red onions
• 50ml fresh lime juice
• 50ml fresh lemon juice
• 100ml fresh orange juice
• ½ habanero, finely diced
• zest of ½ lemon
• 2 tsp good-quality flaky sea salt
• Slice onions into half-moon slivers and put in a non-reactive bowl.
• Sieve citrus juices into the bowl with the onions. Add habanero, lemon zest and sea salt.
• Mix together with a fork until combined and onions are submerged in the liquid.
• Cover with plastic wrap and place in the fridge for at least 2 hours before serving. The citrus (acid) will work its magic and strip the colour from the onions, turning the liquid bright pink. Hence its name — Pink Pickle!
• It will keep in the fridge for up to 3 months in an airtight container.
