Oti's Banana Bread with Cinnamon & Dark Choc Chips

Difficulty: EASY!

Serves: 4-6

Ingredients

• Half cup dark choc chips
• 2 x eggs
• Half cup softened butter
• 1 cup vanilla sugar (easy to always have this on hand - place used vanilla pods into bag of white sugar to gently infuse flavour). Plain sugar will also be delish.
• 1 teaspoon  ground cinnamon
• 1 tablespoon milk
• 3 x ripe bananas (mashed)
• 1 teaspoon TLT Chilli salt
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 2 cups flour 

Method

• Pre-heat oven to 165ºc.
• Grease a loaf tin (we use a silicone one).
• Mix flour, baking powder & baking soda & salt in a bowl.
• In another bowl, stir bananas, milk & cinnamon.
• In a thrid bowl, beat sugar & butter together with electric mixer until light & fluffy.
• Add eggs (1 at a time), beating well after each one.
• Stir banana mix into butter mixture.
• Mix in the flour mixture until combined.
• Fold in the choc chips & then pour batter into greased loaf tin.
• Bake for approx 50 to 60 mins (or until skewer comes out clean).
• Cool in the tin for 10 mins & then turn out to coo fully onto a wire rack.
• We couldn’t wait - so sliced some off like eager beavers after 10 mins & lathered it in butter with a cuppa T. AMAZING...
