Sesame Cold Noodle

Serves: 2

Ingredients

• 150g 3mm round white wheat noodles

• 100g julienned (into noodles) zucchini (optional)
• 2 x springs onions (sliced on a diagonal for garnish)
• 2 x tablespoons sesame seeds (to sprinkle on top of dish once ready to eat)
 
• 3 x large garlic cloves (crushed)
• Thumb size knob of ginger (grated or crushed). We keep a big piece of ginger in the freezer & grate from frozen.
• 2 x tablespoons rice vinegar
• 2 x tablespoons of chilli oil (1 tablespoon of mostly the chilli bits & 1 tablespoon of mostly oil)
• 1 x tablespoon light soy 
• 1 x tablespoon sesame oil
• Half teaspoon ground white pepper

Method

• Heat water in large saucepan. Once boiling, add noodles. 
• Set timer for 7 minutes. If adding zucchini noodles (zoodles). Set timer for 6 mins & add the zoodles for final minute of cooking.
• Mix crushed garlic, ginger, vinegar, chilli oil, sesame oil & ground white pepper together. Set aside.
• Once noodles are ready, turn off heat & drain into colander. Rinse with cold water to stop them cooking & getting claggy.
• Once noodles are fully cool - transfer into large mixing bowl. Add the sauce mixture. Get your hands in there & toss it all together, making sure every strand is coated with deliciousness! YUMBO. Have a taste - should be bangin’…
• Cover bowl & keep in fridge until ready to eat.
• When ready to serve, loosen the noods & divide into serving bowls. Sprinkle sesame seeds & spring onion on top. Enjoy!
