Cooking Time: 40 mins
Difficulty: Easy!
Serves: 6
1 kg boneless chicken thighs, cut into bite-sized chunks
½ pouch Lucky Taco Smoky Chipotle Marinade
1 large onion, diced
2 carrots, chopped
2 capsicums, sliced
10 cloves garlic, crushed
2 x 400 g cans chopped tomatoes
1 x 400 g can chickpeas, drained and rinsed
1 x 400 g can cannellini beans, drained and rinsed
2 cups chicken stock
2 tsp smoked paprika
1 tsp ground cumin
1 tsp dried oregano
1 tsp ground chilli powder (optional)
1 tsp Lucky Taco Chilli Salt
1 whole bag baby spinach
Juice of 1 lemon
Olive oil for cooking
Greek yoghurt and fresh parsley to serve (optional)
Marinate the chicken. Cut the chicken thighs into bite-sized chunks. Add ½ pouch of Lucky Taco Smoky Chipotle Marinade and toss until lightly coated.
Brown the chicken. Heat a generous splash of olive oil in a large cast iron pot over medium heat. Add the marinated chicken and brown for approximately 5 minutes, working in batches if necessary. Remove and set aside.
Build the flavour. Add the onion, carrots and capsicums to the same pot. Cook for 5 minutes until softened, then add the crushed garlic and stir.
Spice things up. Add the smoked paprika, cumin, oregano, ground chilli powder (if using) and Lucky Taco Chilli Salt. Stir for 30 seconds until beautifully fragrant.
Get simmering. Return the chicken to the pot. Add the chopped tomatoes and chicken stock. Stir well, cover and simmer gently for 10 minutes.
Bring on the beans. Add the drained chickpeas and cannellini beans. Stir through and simmer for another 20–25 minutes until the chicken is tender and cooked through.
Go green. Stir in the whole bag of baby spinach and allow it to wilt into the stew. Finish with a generous squeeze of fresh lemon juice.
Serve it up. Ladle into bowls and top with a dollop of Greek yoghurt and a sprinkle of fresh parsley.
This stew tastes even better the next day as all those smoky, savoury flavours develop. Make a big batch, refrigerate the leftovers and enjoy easy, delicious meals throughout the week.
