Spiced Feijoa Cake

Cooking Time: 45 mins to 1 hr

Difficulty: Easy!

Serves: That's up to you! LOL!

Ingredients

For the cake...

• 500g feijoa guts (leave in a colander overnight to let additional liquid drain)
• 1 cup sour cream
• 80g butter
• 1 tsp vanilla essence
• 1 tsp ground cinnamon
• 1 tsp baking soda
• Half teaspoon Lucky Taco Chilli Salt
• Zest of 1 lemon
• 2 eggs
• 300g flour
• 4 tbspns brown sugar
• 8 Lotus biscoff biscuits (crushed) for cake decoration on top (optional)

For the frosting...(optional)

• 60g butter (softened)
• 130g cream cheese (room temp)
• 250g icing sugar
• 1 tsp vanilla essence
• Quarter tsp ground cinnamon

 

Method

For the cake...
• Pre-heat to 180°c.
• Grease a large cake tin (20 / 23cm).
• Cream butter & sugar together & then add vanilla and lemon zest.
• Add eggs 1 at a time, beating well after each addition.
• Sift flour, cinnamon, baking soda & chilli salt & stir into creamed mixture.
• Then add sour cream. Mix well. Then stir in feijoas.
• Pour / scrape into cake tin.
• It’s a thick cake mixture!
• Sprinkle 4 tbspns brown sugar on top.
• Bake in oven for 45 mins to 1 hour. Check at 45 mins. If skewer comes out WITHOUT goop on it & it’s golden brown on top - you’re good! If unsure - just give it another 5 to ten mins.
• Leave to cool in tin on a wire rack for 10 mins. After 10 mins - remove the cake from the tin & leave to cool on wire rack.
• If frosting (which i highly recommend) - you must let the cake cool completely.
For the frosting...
• Mix all ingredients together with electric hand beater or stand mixer.
• Dollop on top of cake & decorate however ya like!
