Serves:
• 2 DRY BALLS OF EGG NOODLES or WHITE WHEAT NOODLES (YOU CAN FIND THESE IN ANY SUPERMARKET)
• 500G BEF RUMP STEAK - SLICED THINLY
• 1 X BROCCOLI HEAD - CHOPPED INTO BITE-SIZE FLORETS (SAVE THE CORE - YOU CAN BOIL IT IN WHEN YOU DO YUMMY MASHED VEGES ANOTHER NIGHT!)
• 2 TABLESPOONS SESAME OIL
• 4 CLOVES GARLIC - CRUSHED
• THUMB-SIZED KNOB GINGER - GRATED OR SLICED SUPER FINE
• 2 CHILLIES - SLICED FINELY
• 2 TSPNS GRATED PALM SUGAR
• 1 TBSPN FISH SAUCE
• 1 TBSPN LUCKY TACO JALAPEÑO HOT SAUCE
• 2 TBSNS LIGHT SOY SAUCE
• 1 TBSPN RICE WINE VINEGAR
• 1 TSPN GRND WHITE PEPPER
• 1 TBSPN FRESH LIME JUICE
• 2 TBSPNS TOASTED SESAME SEEDS
• HANDFUL CORINANDER OR SPRING ONIONS (SLICED FINELY) TO GARNISH
• FOR EASIER COOK COMBINE ALL SAUCES & PALM SUGAR & WHITE PEPPER IN A SMALL BOWL - FOR A QUICK EASY TIP IN
• COOK NOODLES AS PER PACKET INSTRUCTIONS. SAVE A CUP OF THE STARCHY WATER TO ADD TO SAUCE LATER. DRAIN & SET ASIDE WITH LID ON TO KEEP THEM WARM.
• HEAT HALF OIL IN WOK OR VERY HOT FRYING PAN.
• STIR-FRY BEEF IN SMALL BATCHES UNTIL BROWNED - IF YOU OVER-CROWD THE WOK OR PAN THE BEEF WILL BROIL INSTEAD OF BROWN.
• ONCE MEAT IS BROWNED - REMOVE ALL MEAT FROM WOK / PAN & SET ASIDE.
• HEAT REMAINING OIL & ADD GINGER, CHILLI & GARLIC - KEEP MOVING IT FRANTICALLY. WOK COOKING IS FAST. DON'T BURN YOUR GARLIC!
• QUICKLY ADD BROCCOLI & KEEP STIRRING.
• RETURN BEEF TO THE WOK.
• ADD NOODLES.
• THEN ADD PALM SUGAR / PEPPER SAUCE & STIR WELL UNTIL NOODLES ARE GLOSSY & EVENLY COATED.
• TURN OFF HEAT.
• ADD RESERVED STARCHY PASTA WATER. MIX WELL.
• TASTE! (TRY NOT TO BURN YOUR MOUTH HOLE!)
• STIR THROUGH CORIANDER OR SPRING ONIONS (OR BOTH IF YOU'RE FEELIN' FANCY) & TOASTED SESAME SEEDS.
• SERVE! EAT. ENJOY.
• IF YOU DON'T EAT MEAT - YOU CAN EASILY OMIT THE BEEF FOR TOFU FOR A YUMMY VEGETARIAN DISH.
