• good-quality flaky sea salt
• 2 racks pork ribs (about 20 ribs)
• 2 x 450ml cans Cider
• 2 tbsp honey
• 1 tbsp fresh lime juice
• 1 tbsp fresh orange juice
• 1 tbsp Lucky Taco Chipotle Hot Sauce
• 1 tsp Lucky Taco Chilli Salt
• ground white pepper
• Preheat oven to 150°C.
• Sprinkle sea salt generously all over the ribs.
• Pour half the cider into a roasting dish and place ribs over the top, sitting on a wire rack. Cover dish with foil and place in preheated oven for 3 hours. After 1.5 hours, add the remaining cider.
• In a bowl, mix honey with citrus juice and hot sauce. Season to taste with salt and white pepper, then set aside.
• After 3 hours remove ribs from oven, remove foil and crank oven up to 180°C.
• Coat ribs in the sticky honey marinade & sprinkle with Lucky Taco Chilli Salt. Place ribs back in oven, uncovered, for 20 minutes.
• When ribs are done, remove from oven and slice into individual chompable ribs. Soul food!
