Lucky Hearty Seafood Stew

Lucky Hearty Seafood Stew


• 2 cups good quality tomato pulp (we use Mutti)

• Good quality Olive Oil (we use Village Press)

• 4 cloves garlic (peeled and sliced)

• 1 cup white wine or fish stock

• 1 large fillet firm white fish (John Dory / Gurnard / Monk fish) cut into cubes

• 6 tiger prawns

• 1 lemon / zest & juice

• Few sprigs of thyme - roughly chopped

• Handful fresh parsley - roughly chopped

• Salt & pepper to taste

• Splash of light soy & Worcestershire sauce

• 3 tablespoons of Lucky Habanero Hot Sauce

• 2 teaspoons ground cumin

• 2 teaspoons ground coriander


• Place deep saucepan on medium heat and fry your garlic in a splash of olive oil.

• Add garlic. Cook for 1 to 2 mins. Don’t let the garlic brown. Add your wine or stock. Let is sizzle for a minute or two. Then add tomato pulp.

• Add zest & juice of 1 lemon, Lucky Hot Sauce, ground coriander, ground cumin, and fresh herbs and cook for 10 mins on a simmer. Then add a splash of soy and Worcestershire sauce to taste.

• Add fish and cook for 3 mins with lid on. Then add the prawns, cook with lid on for 3 mins.

• Taste & season with salt n’ pepper.

• Divide up the stew and serve with crusty bread and wedge of lemon.

• Sprinkle some parsley over the top.
