Cooking Time: 45 minutes (plus overnight to soak your soup mix)

Serves: 6. Perfect for freezing!
• 300g pulled free-range roast chicken
• 1/4 bottle of Lucky Taco Chipotle Hot Sauce
• 1.5L good quality liquid chicken stock
• 1 white onion (finely diced)
• 5 LGE garlic cloves (finely diced)
• 1 stick celery (chopped into thin slithery slices)
• 1 thumb-sized knob ginger (finely diced)
• 1 chilli (we use habanero) (finely diced)
• 2 LGE carrots (diced into 0.5cm quarter moons)
• 1 cup soup mix (available in any supermarket)
• 1 quarter of a cauliflower (chopped into bite-size florets)
• 1 SML handful fresh thyme (chopped finely)
• 1 SML handful fresh rosemary (chopped finely)
• SML handful of parsley leaves to garnish
• 1 Bay Leaf
• 1 TBSPN Worcestershire Sauce
• Salt & pepper to season / taste
• Juice of half a lemon
• 4cm piece of lemon rind
• 100g dried egg noodle
• 2 TBSNS canola oil
• Put your soup mix in a LGE pot and cover with water. Put the lid on and leave overnight. This releases starches & gases that can upset your tum if you don't!
FAST FORWARD TO THE NEXT DAY:
• Drain the soup mix and rinse through a couple of times with fresh water in a colander.
• Place the soup mix back into the pot.
• Mix The Lucky Taco Chipotle hot sauce through the pulled chicken and set aside.
• Heat canola oil in a LGE frying pan over medium heat.
• Add onion, garlic, celery, ginger, chilli, carrot, thyme & rosemary. Stir and leave to cook down gently for about 5 minutes. Be careful not to let any of the ingredients in the pan brown - just cook down until soft & translucent.
• Pour the contents of the frying pan into the LGE pot with the soup mix. Add the pulled chipotle chicken, cauliflower florets, chicken stock, Worcestershire Sauce, lemon juice, rind, bay leaf & dried egg noodles.
• Turn up the heat & bring to the boil. Mix well, making sure none of the soup mix catches on the bottom.
• Turn the heat to medium / low rolling boil and stir again, mixing all the flavours together.
• After a few minutes, take some kitchen scissors and chop the noodles (they should be soft enough) into small pieces. Stir.
• Turn the heat down to a low simmer and leave for half an hour.
• TASTE TASTE TASTE!
• Time to season. So add some salt & pepper.
• Serve up and garnish with cracked black pepper & fresh parsley leaves.
• Oh. And you'll need some fresh, crusty white bread!
