• 1 SMALL BANANA - MASHED
• 150G SELF RAISING FLOWER
• 1 TEASPOON BAKING POWDER
• 80G GRATED PARMESAN
• 3 JALAPEÑO CHILLIES - FINELY CHOPPED (OR 2 TBSNS LUCKY TACO JALAPEÑO HOT SAUCE)
• 3 EGGS - WHISKED
• 1/2 CUP CHOPPED CORIANDER - ROUGHLY CHOPPED
• 3 TSPNS LUCKY TACO CHILLI SALT
• 1 TSPN GROUND CUMIN
• GENEROUS GRATE OF NUTMEG
• GENEROUS PINCH CRACKED BLACK PEPPER
• ZEST & JUICE OF HALF LEMON
• HANDFUL OF OREGANO FLOWERS TO GARNISH
• GRATE THE ZUKES INTO COLANDER.
• SQUEEZE OUT AS MUCH LIQUID AS POSSIBLE WITH BACK OF PLATE.
• TRANSFER TO MIXING BOWL AND ADD ALL OTHER INGREDIENTS.
• HEAT 2 TSPNS CANOLA OIL IN A FRYING PAN OVER MED HEAT.
• DROP 2 TBSPN MEASURES INTO THE PAN AND FRY FOR A COUPLA MINS EACH SIDE - UNTIL GOLDEN.
• TRANSFER TO A PAPER TOWEL LINED PLATE
• SERVE 2 PER PERSON AND GARNISH WITH OREGANO FLOWERS & SERVE WITH LUCKY TACO SALSA ROJA.GRATE THE ZUKES INTO COLANDER.
2. SQUEEZE OUT AS MUCH LIQUID AS POSSIBLE WITH BACK OF PLATE.
