Serves: 6 - 8
• 1 iceberg lettuce (leaves separated)
• 200g cooked meat (or tofu)
• 4 tomatoes (cut into wedges)
• 1 cucumber (peeled & sliced)
• 100g blanched broccoli florets
• Half red capsicum (cut into strips)
• 1 large onion (cut into rings)
• 2 spring onions (sliced)
• 5 hard boiled eggs (peeled & quartered)
• Big handful coriander
• Lucky Taco Chilli Salt
DRESSING:
• 80g unsalted roasted peanuts
• Half cup lemon juice
• 3 tablespoons vinegar
• 4 cloves garlic
• 3 tablespoons chopped coriander root
• 1 hot chilli (optional)
• 3 tablespoons sugar
• 1 tablespoon salt
• 1 tablespoon fish sauce
• 3 tablespoons hot water
• Blend all dressing ingredients in a food processor or blender.
• Add more water if you want a thinner dressing. But it is, by nature, quite thick.
• TASTE! And dust seasoning / heat if you like. Or add more fish sauce etc…
• Set aside until ready to dress salad.
• Arrange lettuce leaves on a large platter
• Then assemble (make it look pretty!!) all the rest of the salad ingredients on top.
• Dress the salad.
• Finish by scattering coriander leaves on top & a shimmy of Lucky Taco Chilli Salt.
• SO YUMMY!!
