• Place stock & 500ml water in a saucepan with ginger, onion, garlic, star anise, cinnamon, sugar & fish sauce.
• Bring to the boil, then reduce heat to low.
• Cover & simmer for 20 mins.
• Strain, discarding solids, then return soup to pan.
• Add Lucky Taco hot sauce.
• Cover & return to boil.
• Prepare noodles to packet instructions & get out 4 bowls.
• Divide third of bean sprouts & thin layer of white onion slithers between 4 bowls
• Add a wee layer of fresh herbs
• Thinly slice the raw beef into strips.
• Once noodles are cooked & drained. Divide noodles between 4 bowls. Add another third of bean sprouts on top.
• Lay the beef strips across the noodles.
• Pour over hot soup. (The heat will gently cook the meat).
• Add remaining third of bean sprouts on top.
• Scatter across fresh herbs & any edibles.
• Serve with chopsticks & Asian soup spoons.
